Ingredients

  • 1 cup unsalted butter at room temperature
  • 4 ounces cream cheese softened
  • 1 cup sugar
  • 1 egg yolk
  • 2 teaspoons vanilla
  • red food coloring liquid gel or liquid
  • 3 cups all-purpose flour
  • ¼ cup cornstarch
  • ¼ cup unsweetened cocoa
  • ½ teaspoon salt

Cream Cheese Icing

  • 4 ounces cream cheese
  • ½ cup butter at room temperature
  • 1 teaspoon vanilla
  • 4 cups powdered sugar

Instructions

  • Preheat oven to 375° Fahrenheit.
  • Whisk together all-purpose flour, corn starch, salt, and cocoa powder and set aside.
  • Cream the butter, sugar, and cream cheese together in a mixing bowl until smooth.
  • Add the egg yolk, vanilla, and red food coloring (add enough to create the color you want, gel colors will require a lot less than liquid). Scrape down the sides of the bowl before adding in the dry ingredients.
  • On low speed, add half of the dry ingredients until incorporated. Then add the remaining dry ingredients and mix until fully combined.
  • Place half of the dough between two sheets of parchment paper and roll out the dough to the desired thickness. (You may need to add a little flour to the top and bottom to keep it from sticking if the dough feels “wet.”) Using a cookie cutter, cut out your desired shapes Bake for 12-16 minutes.
  • Cool for 5 mins on the baking sheet before transferring to a cookie rack to cool completely 25- 30 mins.
  • Decorate the cooled cookies with cream cheese icing.

To Make Cream Cheese Icing:

  • Add all ingredients to a bowl and mix until well combined. The icing will be thick and creamy like frosting. The longer you mix it, the more air will be incorporated into the icing making it fluffier.
