    Chocolate Chip Banana Muffins

    These delicious Gluten-Free Banana Muffins with Chocolate Chips are great for a grab-and-go breakfast or enjoyed as an afternoon snack.

    This easy recipe for gluten-free banana muffins makes 18 muffins and are a sweet treat or breakfast for anyone who is avoiding gluten.  Let’s take a quick look at how they are made.

    How To Make Gluten-Free Banana Muffins With Chocolate Chips

    For this recipe, you need the following ingredients:

    • 3 bananas (the riper the better)
    • 2 eggs
    • ½ cup unsalted butter, melted
    • ½ cup light brown sugar
    • 2 tablespoons sour cream
    • 1 teaspoon vanilla extract
    • 2 cups gluten-free flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ¼ teaspoon salt
    • 1 cup chocolate chips

    To make them, begin by preheating your oven to 350º Fahrenheit.  Prepare a muffin pan by lining it with baking cups.

    Mashed bananas, brown sugar, vanilla, eggs, and melted butter in glass bowls.

    In a large bowl, mash the bananas and then add the eggs, melted butter, sour cream, sugar, and vanilla. Use a whisk to combine the ingredients.

    Using a rubber spatula, stir in flour, baking powder, baking soda, and salt.  You don’t want to over mix the batter.

    Fold in the chocolate chips.  Lightly stir the batter to get the chocolate chips distributed throughout.

    Use a cookie scoop, an ice cream scoop, or spoon to put the batter in the muffin tins.

    Bake for 20-23 mins or until cooked through.  You can tell they are done by inserting a toothpick in the center of the muffins.  If it comes out clean when you remove it, they are done.  If there is batter on the toothpick, continue to cook the muffins.

    Tips For Making Muffins

    It is best to not use an electric mixer to create this recipe.   Using one it is easy to over mix creating a dense muffin crumb. Whisking by hand, stirring with a rubber spatula, and folding the ingredients helps to incorporate the ingredients fully.

    You can use any type of chocolate chip in this recipe.  Because there are eggs and butter, this recipe is not vegan-friendly, but it is vegetarian.

    This recipe can be made with all purpose flour, but they will no longer be gluten-free.

    The maximum number of bananas for this recipe is 4, anything over that will incorporate too much liquid and require a longer baking time changing the consistency of the muffin crumb.

    Why Gluten-free?

    For some people, a gluten-free diet is a necessity because of gluten allergies or gluten sensitivities.  Some people are born with those conditions and some people develop them later on.  If you suspect that you have problems with gluten, talk to your doctor.
