    Red Velvet Cookies with Cream Cheese Icing

    This Red Velvet Cookies with Cream Cheese Icing recipe will have you baking up love all year long. The rich chocolatey cake-like cookie is a sweet way to say “I Love You!”

    Baking something sweet has been synonymous with showing love for as long as there have been ovens.  These sweet Red Velvet Cookies with Cream Cheese Icing are a great way to show someone you love them through your culinary skills.

    How To Make Red Velvet Cookies with Cream Cheese Icing

    To make red velvet cookies, you need the following ingredients:

    • 1 cup unsalted room temperature butter
    • 4 oz softened cream cheese
    • 1 cup granulated sugar
    • 1 egg yolk
    • 2 tsp vanilla extract
    • Red gel or liquid food color
    • 3 leveled cups All-Purpose Flour
    • ¼ cup of corn starch
    • ¼ cup unsweetened cocoa powder
    • ½ tsp salt
    Flour, cocoa, butter, sugar, egg, and vanilla.

    To make them, begin by preheating your oven to 375 degrees Fahrenheit. Whisk together all-purpose flour, corn starch, salt, and cocoa powder and set aside.

    Next, cream the butter, sugar, and cream cheese together in a mixing bowl until smooth.

    Add in the egg yolk, vanilla, and red food coloring (add enough to create the color you want, gel colors will require a lot less than liquid). Scrape down the sides of the bowl before adding in the dry ingredients.

    At low speed, add half of the dry ingredients until incorporated. Then add the remaining dry ingredients and mix until fully combined.

    Place half of the dough between two sheets of parchment paper and roll out the dough to the desired thickness.

    You may need to add a little flour to the top and bottom to keep it from sticking if the dough feels “wet.”

    Using a cookie cutter, cut out your desired shapes.  Bake the cookies for 12-16 minutes.

    Cool for 5 mins on the baking sheet before transferring to a cookie rack to cool completely 25- 30 mins.

    How To Make Cream Cheese Icing

    Cream cheese, powdered sugar, butter, and vanilla.

    You can use this creamy icing/frosting to decorate the tops of the red velvet cookies and/or use it as a filling to make them into cookie sandwiches. To make the icing, you need the following:

    • 4 oz cream cheese
    • ½ cup room temperature unsalted butter
    • 1 tsp vanilla extract
    • 4 cups powdered sugar

    Add all ingredients to a bowl and mix until well combined. The icing will be thick and creamy like frosting. The longer you mix it, the more air will be incorporated into the icing making it fluffier.

    Once the cookies are completely cooled, you can decorate them.
